Salt and Vinegar Roasted Chickpeas
Salt and Vinegar Roasted Chickpeas are a quick and delicious healthy snack or appetizer that tastes like your favorite salty, crunchy and sour chips!
Today, I have a quick and easy recipe to share with you. I have been making these salt and vinegar roasted chickpeas for at least 7 years and it is one of my favorite snacks. Why haven't I shared it until now? I don't know! I make these all the time when I want a salty, crunchy, sour snack that is actually quite nutritious. My other Roasted Chickpeas recipe on my blog is one of my most popular recipes ever so I know that you are going to love this version as well.
I made these for my daughter for the first time a couple of months ago and after seeing how much she loved them, I had to finally share the recipe. She calls them "crunchy sour beans" which I think is hilarious. The two of us cannot stop eating them until they are all gone. I need to learn to make bigger portions of these!
These are super easy to make. Just drain, rinse and pat the beans dry. Drizzle with olive oil and roast in the oven. Then, sprinkle with white vinegar and sea salt when they are almost done and you will have the most delicious snack. If you love salt and vinegar chips, you will love these for sure!

Salt and Vinegar Roasted Chickpeas
Salt and Vinegar Roasted Chickpeas are a quick and delicious healthy snack or appetizer that tastes like your favorite salty, crunchy and sour chips!
Prep Time: 2 minutes Cook time: 25 minutes Total time: 27 mins
INGREDIENTS
- 2 cans low-sodium chickpeas
- 2 tablespoons olive oil
- 2-3 tablespoons white vinegar
- 1/2 teaspoon sea salt
INSTRUCTIONS
- Preheat oven to 400 degrees. Drain, rinse and dry chickpeas with a paper towel. Toss in olive oil on a baking sheet. Roast for 20 minutes.
- Remove from oven and mix chickpeas with vinegar and sprinkle with sea salt. Return to the oven for about 5 minutes or until chickpeas are crunchy.
**These can be stored for a couple of days in the fridge though they are best eaten that day.
