Hawaiian Chicken Kebabs
Hawaiian Chicken Kebabs are the perfect grilled dish with tangy marinaded chicken, fresh, juicy pineapple, colorful bell peppers and red onions!
It is almost summertime meaning that it is time for all things grilled! Troy and I just bought a new gas grill after our old one kicked it and we are loving it. I have a list of a bunch of grilled recipes that I want to try and am finally getting around to making these kebabs with pineapple, chicken, peppers, onions and a sweet, tangy marinade that I've been wanting to make for quite awhile now.
These skewers are pretty easy to make and just require marinading time. Funny story, my sister made similar kebabs last year and brought them over my house to grill. We were eating them and they tasted amazing but we realized that the chicken had gotten kind of mushy/gooey. We could not figure out what had happened.
After some research, we realized that it was because she marinaded the pineapple and chicken together overnight on the skewers which caused the chicken to break down. Lesson learned: do not marinade chicken and pineapple right next to each other for 24 hours. They were still delicious though and we joke about it to this day!
These can be eaten as a complete meal or served with some brown rice to make the meal a little more filling. Or they would be fun with some other grilled veggies. These kebabs are super fun for summer and you can feel free to customize however you like. You could use pork instead of chicken and add in other vegetables if you like.
I served these to my mom and daughter one day for lunch and we all loved them. There is nothing like a tasty grilled chicken breast. It was my first grilled chicken of the year which made it even more delicious. My toddler liked the pineapple the best while I liked the chicken the most.

Hawaiian Chicken Kebabs
Prep Time: 20 minutes
Cook Time: 10 minutes
Servings: 4
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 1 green pepper, cut into about 1 inch pieces
- 1 red pepper, cut into about 1 inch pieces
- 1 red onion, cut into about 1 inch pieces
- 3 cups fresh pineapple, cut into about 1 inch pieces
- 1/3 cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1/4 cup canned pineapple juice
- 1/4 cup ketchup
- 1 teaspoon garlic powder
- 2 tablespoons brown sugar
- 1 teaspoon black pepper
Instructions
1. Mix together all ingredients for marinade. In a large plastic bag, add marinade (save ~1/4 cup of marinade to pour over at the end) and chicken breasts. Marinade for 2-3 hours.
2. Thread the chicken, peppers, onion and pineapple onto skewers.
3. Turn the grill on medium and place the skewers on the grill. Cook for about 4-5 minutes on each side until chicken is cooked through. Pour extra marinade over kebabs and serve immediately.

For this recipe, I used all ingredients that I purchased at Meijer. Meijer has an awesome produce section including the freshest items. When we lived on the west side of the state of Michigan, we did almost all of our shopping at Meijer since we liked the food and it was one of the only grocery stores around.
