Bruschetta Chicken
Bruschetta Chicken is ready in just 20 minutes and is the perfect fresh and flavorful recipe with tomatoes, garlic, Parmesan cheese and basil!
Life is a little bit crazy over here in the Hernandez household. We have a new baby and a toddler and are getting into the swing of things as a family of 4. Overall so far, our transition is so much easier than I expected (please do not let me be jinxing it!). The ease of our transition has to do with a few things.
Troy has been super helpful doing most of the diaper changes, helping with Adalyn and helping with things around the house. Adalyn has been a helpful big sister grabbing Oliver's pacifier or blanket if he needs it. And so far, compared to Adalyn, Oliver is a chill baby. Let's wait and see what happens...
I have been more relaxed with things this time around because I knew what to expect a little more. Also, my start into parenthood last time started with 2 nights of completely skipped sleep because I was in labor for a long time. Anyways, I am so thankful that we are getting used to being a family of 4 and absolutely love it!
I thought that we would only be eating freezer meals for awhile but with Troy home for a little over two weeks, I have wanted to do some simple cooking while still making food that sounds amazing and that we would love. We all deserve a little treat with the craziness that comes with having a newborn!

I created this bruschetta chicken recipe that is ready in about 15-20 minutes for a delicious but simple meal. While the chicken breasts are sauteing, you can chop up everything for the bruschetta and it will be ready in no time. I love bruschetta for a delicious appetizer. It is typically eaten over little toasts but this time, I wanted to make it into a complete meal by serving over chicken breasts.

Bruschetta Chicken
Prep Time: 10 minutes
Cook Time: 10 minutes
Servings: 4
Ingredients
- 1 1/2 tablespoons olive oil
- 1 1/2 pounds boneless, skinless chicken breasts
- 2 large tomatoes, chopped
- 3 cloves garlic, finely minced
- 6 basil leaves, chopped
- 1 tablespoon olive oil
- 2 teaspoons red wine vinegar
- 1/4 cup shredded Parmesan cheese
- 1/2 teaspoon pepper
Instructions
1. Heat a pan on medium and add olive oil. Sauté chicken breasts for 5 minutes on each side until cooked through.
2. Meanwhile, mix together all ingredients for bruschetta.
3. Top chicken breasts with bruschetta. Enjoy!
