Fruit, Seed and Spinach Salad with Strawberry Vinaigrette
Fruit, Seed and Spinach Salad with Strawberry Vinaigrette features a fresh salad with strawberries, blueberries, blackberries, mango, dried fruit and seeds all topped with a homemade fruit vinaigrette.
I pack my lunch for work four days per week. Sometimes, it is super easy to get ideas for what to pack in my lunch and there are other days when I stare at the open fridge and have no ideas of what to pack.
Especially when I was pregnant, I found that if I packed something that I was not that interested in eating, I just wouldn't eat it. Instead, I turned to something less healthy from the kitchen at work and didn't feel my best.
I created this super delicious fruit, seed and spinach salad with a homemade strawberry vinaigrette because I knew that it would be very delicious and healthy. It is something that I would not get sick of eating and could make ahead of time and store in the fridge for a couple of days to enjoy through the week.
It is nutritious and quite filling. Top with your choice of chicken, feta or blue cheese or even quinoa or other whole-grains for a complete meal.
You can use whatever fruit you have on hand for it. Any kind of berries will work and so will pears, apples, stone fruits and dried fruits. I chose what looked best at my local grocery store and next time I make it, I will probably switch the fruit up again! I used seeds because I am all about the healthy fats. This recipe is vegan the way that it is made right now. That can change depending on if you add meat or cheese.
For this recipe, I used Enjoy Life Foods Beach Bash Seed and Fruit Mix which is super tasty! It contains sunflower kernels, pumpkin seeds, dried pineapple, apricots and cranberries. It is free of nuts which is perfect for those who want a healthy snack that is nut-free. It made the perfect crunchy and chewy salad topping as well.

Fruit, Seed and Spinach Salad with Strawberry Vinaigrette

Servings: 4
Ingredients
- 6 cups baby spinach
- 1/2 cup strawberries, sliced
- 1/2 cup blueberries
- 1/2 cup blackberries
- 1/2 mango, sliced
- 1/2 cup Enjoy Life Beach Bash Seed and Fruit Mix
- 3/4 cup strawberries
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 tablespoon honey
- 1/2 teaspoon black pepper
Instructions
1. In a blender or food processor, combine all ingredients for strawberry vinaigrette and blend until very smooth.
2. Mix together all ingredients for salad. Top salad with dressing and enjoy!
