Spicy Gazpacho Soup
Spicy Gazpacho Soup takes 10 minutes to make and is full of flavor with fresh jalapenos, tomatoes, cucumber, onion, bell peppers and basil for a light and fresh meal!
I've always wanted to make gazpacho and finally got around to making it myself! My mom makes a great gazpacho in the summer and it was time that I made one myself. Though it is not quite summer, I am itching for lighter and fresh foods and am thrilled with this quick and easy spicy gazpacho soup.
Since it is meat-free, this recipe would be perfect to eat on a Friday during Lent. We do not eat meat everyday but sometimes during Lent, it seems hard to skip meat on Fridays. Probably because we tend to go out to eat on some Fridays. One meat-free event that we enjoy going to is this awesome "fish fry" at a local Catholic church. It is not your typical fish fry and includes a couple of different main dishes, lasagna, several salads and side dishes and is a really nice event. I look forward to going a couple of times each year.
This spicy gazpacho takes about 5-10 minutes to make which is awesome! You can use whatever vegetables, herbs and spices that you have on hand. If you have celery that you want to use up, add that. Add spinach. Use your choice of tomatoes. Skip the basil and use parsley or cilantro instead. It is totally up to you! After you blend up this soup, try it and adjust the spices according to your preferences. Maybe you want a bit more garlic, spice or pepper. Do whatever you feel like and it is bound to turn out delicious!
I need to make this recipe for my parents because they would love it! My dad loves soup so having a little Friday night party during lent would be perfect. What would go along well with this is a hearty grilled cheese sandwich, seafood, etc.
I used Clamato® tomato cocktail in this recipe from Walmart which provided a bunch of flavor and was the perfect liquid to use! I also got my fresh vegetables from there and was happy with the quality and flavor of the vegetables.

Spicy Gazpacho Soup
Prep Time: 10 minutes
Servings: 4
Ingredients
- ~2 pounds tomatoes (4 large)
- 1 red bell pepper, sliced
- 1 English cucumber, chopped
- 1 fresh jalapeno, chopped
- 1/2 medium red onion
- 1 1/2 cups Clamato tomato juice
- 1/4 cup basil leaves
- 2 cloves garlic
- 2 tablespoons red wine vinegar
- 1 teaspoon black pepper
- Toppings: tomatoes, basil, red onion, sliced jalapenos, etc.
Instructions
Add all ingredients to blender and puree until completely smooth. Enjoy immediately or chill until very cold. Top with toppings of choice.
