Although my family is not Irish, we have been celebrating St. Patrick's Day for as long as I can remember. The main reason is because we grew up having Irish Setter dogs. We would have an Irish meal and the dogs would dress up in Irish gear.

Since I married Troy, we have another reason to celebrate. Troy is 1/4 Irish! His Mom's mom was Irish. Nationality is a big deal in my family because we enjoy celebrating different heritages. My mom loved making different ethnic meals each week and Irish is a fun one to celebrate.

I have to be honest here: I have never actually had a shamrock shake. I've wanted one but somehow, never made it out to get one. Since I love the challenge of making healthier options of popular food and drinks, I decided to make my own shamrock shake that is lighter and actually very nutritious.

I used frozen bananas which I find to be the best base for any smoothie. It provides so much creaminess, natural sweetness and flavor. Whenever I have a smoothie that does not have banana, I think it is missing something. Of course, for some greenness, I had to add some baby spinach which adds a great boost of nutrition.

If you have mint leaves available, you can use those for a minty flavor or you can get mint extract from the baking and spices section of your grocery store. Either works! Top with some chopped up dark chocolate for a sweet treat. My daughter absolutely LOVED this smoothie and had the cutest green mustache when drinking it. Even Elmo got a taste of it....not good!! Haha.

Healthy Shamrock Shake


Prep Time: 5 minutes or less
Servings: 1

Ingredients 

  • 1 frozen banana
  • 1 cup milk
  • 1 cup baby spinach
  • 1 scoop vanilla protein powder
  • 2 mint leaves or 1/4 teaspoon mint extract
  • 1 teaspoon dark chocolate shavings

Instructions

Blend all ingredients together and top with dark chocolate. Enjoy!
