I love any Asian inspired salads and stir-fries, especially ones that have anything to do with peanuts or peanut butter. Anytime I am at a restaurant, I love ordering dishes like this. The flavors of sesame oil, peanut butter, soy sauce and rice vinegar are my favorite together! They give the most delicious and addictive flavors. This peanut pork stir-fry is full of flavor your family will love.
This sauce would even be awesome on any salad. You could mix the ingredients together and store them in a mason jar for a week or two in the fridge. My daughter loved this recipe and so did my husband. I will make it again. I would switch up the vegetables in the dish and make it with whatever I have on hand. I think it would be good with pea pods and bok choy as well. This peanut pork stir-fry is so simple and quick, it is perfect for any weeknight meal.
How to Make Peanut Broccoli and Pork Stir-Fry
This stir-fry can easily be made vegan with tofu which I have made before and it is delicious as well. Or chicken or beef of course! For years, I was not great at making homemade Asian food. The problem is that I did not want to add fat to it. My stir-fries tasted "too healthy". Once I got over that and discovered sesame oil, my Asian food was so much better. Peanut Broccoli and Pork Stir-Fry

INGREDIENTS
- 8 ounces lean pork chops
- 1 tablespoon sesame oil
- 1 large head of broccoli, chopped
- 1/2 cup diced green onions
- 1/3 cup peanuts
- 1 tablespoon black sesame seeds
- Peanut sauce
- 1/4 cup peanut butter powder
- 1 tablespoon sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon water
INSTRUCTIONS
- Dice pork chops. Heat sesame oil in a fry pan. Cook pork until cooked through- about 8 minutes.
- Add the broccoli and 2 tablespoons water and cook for about 2 minutes.
- Whisk together all ingredients for peanut sauce.
- Toss together pork, broccoli, peanut sauce and remaining ingredients.
- Serve immediately or stores well in the fridge for a few days.
