Pepper Jack and Bacon Stuffed Mushrooms

Pepper Jack and Bacon
Stuffed Mushrooms are ready in just 20 minutes and make the perfect easy and
flavorful appetizer that everyone will love with melty, spicy pepper jack
cheese and hickory smoked bacon!
The first time that I
made these stuffed mushrooms was New Year's Eve last year. We were at my
brother's house and we decided to make a bunch of appetizers and drink
champagne. We went to the store to get all of the ingredients but forgot to buy
stuffing mix for stuffed mushrooms. Instead of scrapping the stuffed mushrooms
all together, I decided to make due and make a whole different type of
stuffed mushrooms instead.
These Pepper Jack and Bacon Stuffed Mushrooms were then born. We had fresh pico de gallo on
hand, pepper jack cheese and bacon. I chopped everything up very finely,
stuffed the mushrooms, threw them in the oven and hoped for the best. They
turned out so amazing! Much better than stuffing mushrooms.
I've been wanting to
make these stuffed mushrooms since that date but somehow, never got around to
it until now. I'm excited to share this recipe with you because these are super
easy to make and taste so good! They are the perfect appetizer and would
especially be awesome to have for any tailgate party or anytime you are
watching a game with family and friends.
Pepper Jack and Bacon Stuffed Mushrooms
Prep Time: 5 minutes
Cook Time: 15 minutes
Servings: 4
Ingredients
- 1 pound white mushrooms
- 3 slices Wright® Brand Hickory Smoked Bacon, diced
- 1 small roma tomato, diced
- 1/2 small onion, diced
- 1/4 cup pepper jack cheese, shredded
Instructions
1. Preheat oven to 350
degrees. Spray a baking sheet with nonstick spray.
2. Remove stems from
mushrooms and set aside for another use or discard.
3. In a bowl, combine
mushroom stems, bacon, tomato, onion and pepper jack cheese and mix together
well.
4. Stuff mushrooms with
filling and bake for 15 minutes until mushrooms are softened, cheese is melted
and bacon is crispy.
For this recipe, I
used Wright Brand Bacon in the hickory smoked
flavor. I got this bacon in the refrigerated section at Kroger. It provided so
much delicious flavor to this dish. So good! You do not need a ton to provide a
bunch of flavor that makes these stuffed mushrooms irresistible. These stuffed
mushrooms are the perfect snack hack because it will look and taste like you
spent a long time making these but they really just take a few
minutes of prep and then 15-20 minutes of baking time. This bacon is thick and so perfectly smoked!
Tyson®Any’tizers® in the frozen foods section and Ball Park® Hot
Dogs in the refrigerated section all from Kroger make fun appetizers
that you just need to throw into the oven for a party. I like to make a
combination of homemade foods and prepackaged ones when throwing a tailgating
party. For example, I like making premade boneless chicken wings along with
homemade stuffed mushrooms and a veggie tray. It’s a tabletop tailgate that
guests will love!
The Ball
Park Hot Dogs would be perfect with a homemade Chicago style relish
(tomatoes, pickles and onions). The Tyson Any'tizers boneless
wings would be awesome with a homemade Greek yogurt ranch dressing.
I am looking
forward to the Big Game. No, I do not mean watching football. I mean eating a
bunch of delicious food while watching the commercials. Homegating as I'll call
it is so much fun because you can be in the comfort of your own home and sit on
your comfy couch along with your favorite foods. I like to make sure to have
all of the food ready right as the game starts so we can make a plate and sit
down and watch the game/commercials. I make everything buffet style for
simplicity and leave the food out so people can eat throughout the game.

I've had stuffed mushrooms before but never that flavor combination. Looks quite delicious. Will definitely have to make them sometime soon.
