15 Minute Cashew Chicken is ready so easy to make and is the perfect lighter stir-fry with chicken, cashews, peppers, carrots, pineapple, celery and a delicious sauce!
I am a big fan of Asian food and finally learned to make it really tasty at home. When Troy and I were first married, I would try to make our stir-fries too healthy with little to no fat and that did nothing on taste for our meals. When I discovered sesame oil thanks to my mom and stopped fearing putting fat in foods, my stir-fries and Asian meals turned out so much better.
I can whip up a meal in 15 minutes with whatever vegetables and protein we have on hand and it always turns out great now. I have a little formula in my head for stir-fries and as long as I stick to that as a guideline, Troy, Adalyn and I are very happy with the results.
I have been wanting to make a cashew chicken recipe for awhile to share with you. This is my go-to dish at Chinese restaurants. I love the crunchy celery, carrots and cashews along with the delicious sauce. This version is lighter than the one made at your favorite restaurant but is not short on any flavors.
Feel free to use whichever vegetables you have on hand. I like celery, carrots, bok choy, pea pods, peppers, broccoli and more in my stir-fries. Sometimes, we include a meat such as chicken and sometimes, we use tofu or peanuts for protein.
We often pair it with rice if I think to make it ahead of time- sometimes we are 30 seconds away from eating dinner when I remember to make it- whoops! My husband loves having rice with his cashew chicken and we almost always do brown rice for the increased fiber.

15 Minute Cashew Chicken
Prep Time: 5 minutes
Cook Time: 10 minutes
Servings: 4
Ingredients
- 1 tablespoon sesame oil
- 1 pound boneless, skinless chicken breasts, cut into bite sized pieces
- 1 bell pepper, sliced
- 3 stalks celery, diced
- 3 large carrots, sliced
- 1/2 cup Dole® Pineapple in 100% Pineapple Juice
- 1/2 cup roasted cashews
- 3 cups cooked Minute® Whole Grain Brown Rice
- 1/4 cup Kikkoman® Less Sodium Soy Sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon garlic powder
- 1/2 teaspoon red pepper flakes
Instructions
1. Heat oil in large pan and add the chicken and saute for 5 minutes until chicken is lightly browned.
2. Add in the vegetables and saute until the chicken is cooked through and the vegetables are still partially crisp, about 4 minutes.
3. Whisk together the ingredients for the sauce and pour over chicken and vegetables. Add in the pineapple and cashews and cook for 1 minute longer.
4. Serve with cooked brown rice (cook according to instructions).

This dish turned out delicious! My husband, daughter and I all enjoyed it. It was so simple to make and was ready in about 15 minutes. I used Minute® Whole Grain Brown Rice to serve with the stir-fry which we have been using for years as a simple, whole-grain option that tastes great. It is ready in just 10 minutes which I love for a quick side dish.
I used Kikkoman® Less Sodium Soy Sauce for the sauce. I always go with a lower sodium soy sauce because soy sauce is naturally very salty and the less sodium version tastes the same.
The Dole® Pineapple provided the perfect amount of sweetness and went well with the crunchy cashews and flavorful sauce.
