Sheet Pan Sweet and Sour Chicken
Sheet Pan Sweet and Sour Chicken is an easy dinner cooked all on one tray for fewer dishes to wash and less work! Features pineapple, bell peppers, carrots, chicken and a homemade sweet and sour sauce.
I am all about easy dinners when life gets busy. When my Busia (grandma) was sick, cooking was the last thing on my mind and when we would come home from the hospital, we just grabbed whatever we could find to eat or went out to eat. I am getting back on track by cooking healthy but still want to stick to easier meals.

I love sweet and sour chicken and so did my Busia. That is often what she ordered at her favorite Chinese restaurant. Now that she is gone, it is going to be hard to go back to that restaurant that we went to with her so many times. I am not a fan of the breaded version of sweet and sour chicken though.
I prefer to make mine at home with a homemade sweet and sour sauce, fresh carrots, bell peppers and pineapple. It is healthier this way and tastes a lot better. I decided to try out the one-pan dinner trend with this recipe and let me tell you, I will be making it again. It is so easy to just throw everything in the oven, later drizzling on the homemade sauce and dinner is ready in no time.
This dish is flavorful and awesome served over some rice or eaten as is. If you want to make is super speedy, use quick cooking brown rice or make your rice ahead of time like I do and freeze it in sandwich bags for super quick meals. All of the vegetables together taste so amazing with the sauce. I cannot wait to make this again!

Cook Time: 20 minutes
Servings: 4
Ingredients
- 1 pound boneless, skinless chicken breast, cut into bite sized pieces
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cups pineapple, cubed
- 2 large carrots, peel and coined
- 1 red onion, chopped
- 2 tablespoons sesame oil
- 1 teaspoon garlic powder
- 1/3 cup ketchup
- 1 tablespoon brown sugar
- 1/2 teaspoon red pepper flakes
- 1 tablespoon honey
- 3 tablespoons rice vinegar
- 1/2 teaspoon black pepper
- 1/4 cup fresh squeezed orange juice
- 1 1/2 teaspoons cornstarch
- 2 teaspoons sesame seeds
Instructions
1. Preheat oven to 400 degrees.
2. Place chicken, peppers, pineapple, onion and carrots on baking sheet. Drizzle with oil and mix well until everything is lightly coated.
3. Whisk together all ingredients for sweet and sour sauce.
4. Cook chicken and vegetables in oven for 15 minutes. Take pan out of the oven and pour on sweet and sour sauce. Mix well and bake for another 5 minutes until chicken is fully cooked through. Serve immediately and enjoy!
