Baked Chicken Tenders with Avocado Jalapeno Dipping Sauce
Baked Chicken Tenders with Avocado Jalapeno Dipping Sauce are a lighter take on typical chicken strips with a crunchy cereal breading that everyone will love!
Adalyn is getting old enough to start watching some movies! I am so excited. While we have not taken her to the theater yet (I am a little too nervous for that- maybe sometime this winter), we have enjoyed watching a couple of movies together as a family at home.
As Christmas approaches, I am trying to teach Adalyn the meaning of Christmas and enjoy with her some of the shows and movies that I watched growing up. We have watched some videos on my phone of different Christmas classics and I know that Troy has some family movies planned. He loves tradition and seasonal movies.
I created these baked chicken tenders with avocado jalapeno dipping sauce for my whole family to enjoy before a family movie. They are kid friendly but if your child does not like spicy, you can just leave the jalapeno out of the sauce or give them a different sauce to enjoy with it.
I love this spicy flair on this dip. It would be perfect for an appetizer paired with salsa, chips and guacamole or as part of a meal with a Mexican loaded salad with lots of veggies. If you like your chicken tenders spicy as well, you can add 1/2 teaspoon cayenne pepper to the breading mix. Yum!
Baked Chicken Tenders with Avocado Jalapeno Dipping Sauce
Prep Time: 10 minutes
Cook Time: 30 minutes
Servings: 4
Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 eggs, beaten
- 2 cups Honey Bunches of Oats Honey Roasted
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1/4 cup pickled jalapenos
- 1 cup plain Greek yogurt
- 2 cloves of garlic
- Juice from 1 lime
- 1 avocado
- 1 tablespoon apple cider vinegar
Instructions
1. Preheat oven to 400 degrees.
2. Cut chicken breasts into strips. In a blender or food processor, crush cereal along with garlic powder and black pepper.
3. Dip chicken breasts into beaten egg and then cereal mixture. Place on a baking sheet that is sprayed with nonstick spray. Cook for 25-30 minutes or until chicken is cooked through and tenders are crispy.
4. Blend together all ingredients for avocado jalapeno dipping sauce.
5. Serve chicken tenders with sauce. Enjoy!
