Kale Salad with Lemon Yogurt Dressing

I recently wrote about my awesome trip to the ALDI headquarters and about how much I love ALDI. We got to try all different kinds of recipes at the event and today, I wanted to share one of the delicious recipes that we got to sample: kale salad with lemon yogurt dressing.Thank you so much to my friends at ALDI for sponsoring this post! The recipe was demonstrated to us in a part of the event was called "Blog Like a Chef" which was taught by Chef Brigitte Prather. She was so down to earth and nice to talk to. She has been on multiple Food Network shows and has her own cooking show on Fox each week in Lexington, Kentucky where she lives. She whipped together this delicious salad and then, we got to make it ourselves while filming a video of making it.
This salad only takes 5 minutes to make which is part of what drew me to it. Plus, I love kale! Kale is a nutrient packed vegetable and especially during pregnancy, I love knowing that I am getting a boost of vitamins and minerals when I am eating it. It is also packed with flavorful toppings including walnuts for protein and healthy fats and dried cherries for sweetness.
What I love about this dressing is that it is made with Greek yogurt for creaminess. I make my own vinaigrette often but never thought to add Greek yogurt to it to make it creamy. What a great idea! Plus, it came out delicious. I would also make this recipe with fresh spinach as well.
Kale Salad with Lemon Yogurt Dressing
Prep Time: 5 minutes
Servings: 8
Ingredients
- 1/2 cup plain, Friendly Farms
Plain Nonfat Greek Yogurt
- 3 tablespoons Carlini Extra Virgin
Olive Oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon balsamic vinegar
- 2 teaspoons SimplyNature Organic
Wildflower Honey
- 1 teaspoon lemon zest
- 1/4 teaspoon ground Stonemill
Essentials Peppercorn Grinder
- 16 cups SimplyNature Organic Kale
- 1/2 cup Southern Grove Dried
Cherries, halved
- 1/2 cup Southern Grove Walnuts,
diced
- 1/2 cup plain, Friendly Farms
Plain Nonfat Greek Yogurt
Instructions
1. In a bowl, whisk together yogurt, olive oil, lemon juice, vinegar, honey, lemon zest and pepper.
2. Toss dressing with kale and massage with your hands (to help tenderize the kale). Allow to rest for about 30 minutes (10 minutes will do the trick in a pinch).
3. Toss in dried cherries and walnuts.

All of the ingredients for this recipe were purchased at my local ALDI for a fraction of the cost that it would be anywhere else. When buying all ALDI ingredients for this recipe, it is estimated to cost $1.83 per serving which is really good considering that there are almonds and avocados in the original recipe which I did alter a bit based on what I had on hand.
