Cranberry Greek Yogurt Parfaits
Cranberry Greek Yogurt Parfaits are full of flavor with fresh cranberry sauce, protein-packed Greek yogurt and crunchy granola for the perfect breakfast!
I love all things cranberry! Most people just eat cranberries around the holidays (besides dried cranberries) but I eat fresh cranberries year round. Bags of fresh cranberries are inexpensive around the holidays and freeze so well so that you can eat them all year long. I will usually buy at least a few bags during this season so that I can make cranberry recipes all year long. I love the tart flavor of fresh cranberries!
Some of my favorite ways to eat cranberries are in a homemade sauce, in my oatmeal or in a bread such as a banana bread. Cranberries are versatile and can be substituted for something like blueberries in many recipes. You just may need a bit more sweetener to balance out the tart cranberries depending on the recipe.
These cranberry Greek yogurt parfaits are easy to make and are perfect for the holiday season (or year round!). I made a homemade cranberry sauce to layer in the parfaits. It uses just three ingredients- fresh or frozen cranberries, cinnamon and maple syrup. Then, I added in layers of vanilla Greek yogurt and granola. I found a fun granola with dried cranberries and cashews which is delicious. Feel free to use whatever granola you like!
These parfaits are rich in protein from the Greek yogurt as well as calcium. The granola provides whole-grains and fiber and the cranberries are rich in vitamin C, fiber and manganese. These parfaits are perfect for breakfast, snack or even a healthy dessert!
Cranberry Greek Yogurt Parfaits
Prep Time: 5 minutes
Cook Time: 15 minutes
Servings: 4
Ingredients
Cranberry Sauce
- 12-ounce bag fresh or frozen cranberries
- 3/4 cup water
- 1/4 cup maple syrup
Parfait
- 4 cups plain Greek yogurt
- 1/4 cup maple syrup
- 1 cup granola
Instructions
1. In a medium saucepan, combine cranberries along with water. Cook over medium heat until cranberries are bursting and soft, about 10 minutes. Add in maple syrup and cook another 5 minutes.
2. Turn off heat and cool cranberry sauce to room temperature or slightly warm.
3. Mix together Greek yogurt with maple syrup.
4. Layer maple Greek yogurt, cranberry sauce and granola in a glass or jar and enjoy!
