Fruit Tart Baked Oatmeal
This Fruit Tart Baked Oatmeal is so easy to make, reheats well and is a healthy take on your favorite fruit tart or fruit pizza. Customize with your favorite fruit!
I don't want to let summer leave just yet! I refuse to! My favorite food is summer food. Anything off the grill, fresh corn and tomatoes, stone fruit such as peaches, plums and cherries and more. I have been dreaming of this fruit tart baked oatmeal since last winter and finally got the chance to do so.
I wanted to take the idea of a fruit pizza or fruit tart and make it super healthy with a baked oatmeal crust. It turned out so well. I used quick cooking steel cut oats for this recipe and loved the texture. This reheats really well all week. I knew that I had a busy week ahead so I portioned some of this baked oatmeal out for the week and loved it for breakfast each morning at work.
Feel free to use whatever fruit you want or have on hand. Also, if you prefer another flavor of yogurt, feel free to use that instead. My little 2 year old daughter absolutely loved this and called it "cake". Haha- if you say so!
Fruit Tart Baked Oatmeal
Prep Time: 5 minutes
Cook Time: 20 minutes
Servings: 6
Ingredients
- 3 cups Bob's Red Mill quick cooking steel cut oats
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons cinnamon
- 1 1/3 cups milk
- 1 scoop Purely Inspired Organic Protein in French Vanilla
- 2 eggs, beaten
- 1/4 cup light syrup
- 1/2-3/4 cup vanilla Greek yogurt
- 1 1/2 cups of fruit, sliced
Instructions
1. Preheat oven to 375 and spray a baking dish with nonstick spray.
2. In a bowl, combine all ingredients except and mix well.
3. Pour into a baking dish and bake in the oven for 20 minutes.
4. Remove from oven and let cool partially.
5. Spread baked oatmeal with Greek yogurt and top with fruit.

What I like is that this protein is not too sweet and it does not take over a recipe. The protein mix is dairy, gluten and soy free. Flavors include French vanilla and decadent chocolate.
