Buffalo Chicken Flatbread Pizza
Buffalo Chicken Flatbread Pizza is easy to make and is full of flavor with spicy buffalo chicken, creamy blue cheese and flavorful green onions!
Up until a year or two ago, I was not the biggest buffalo fan. The flavor didn't do much for me and I would have chosen many other flavors instead of buffalo. Well friends, times have changed and I love buffalo flavored anything. Buffalo chicken dip, buffalo chicken soup (which I need to recreate and share the recipe) and homemade buffalo hummus are all regulars in my household.
With school being back in session, it is time for some quick meals that taste great and do not take a lot of time to make. One day after work, I got the idea of making buffalo chicken pizza. I do not know why I had never made it before! I have had it at restaurants and in my husband and I's opinion, this version is just as good as the ones in the restaurants.
My usual style of cooking is to use the ingredients that I have on hand to make a recipe but after I got the idea for this pizza, I sent my husband and daughter out to the store to get mozzarella cheese and blue cheese right away.
Funny story: Troy comes home and says "Do you know how I know that Adalyn is so your daughter?". I asked how. He said that Adalyn was holding the container of blue cheese on the way home which he was okay with because he knew that she couldn't get into it. Suddenly, he smells a strong scent of blue cheese and looks back and she is shoving handfuls of it into her mouth!!! That made my laugh so hard. My daughter for sure. Whenever I am on the way home from a grocery store, I always snack on something that I bought.
This Buffalo Chicken Flatbread Pizza uses a homemade buffalo sauce which is just hot sauce mixed with butter. It combines mozzarella and blue cheese for a ton of flavor. It is topped with finely diced green peppers and green onions for color and flavor.
Buffalo Chicken Flatbread Pizza
Prep Time: 10 minutes
Cook Time: 10 minutes
Servings: 4
Ingredients
- 2 tablespoons hot sauce (I used Frank's)
- 1 tablespoon butter
- 2 medium boneless, skinless chicken breasts
- 2 Flatout Artisan Thin Pizza Crusts
- 3/4 cup shredded mozzarella cheese
- 1/3 cup blue cheese
- 1 green bell pepper, finely diced
- 2 green onion, finely diced
- 2 tablespoons hot sauce
- 1 tablespoon butter
Instructions
1. In a bowl, heat together the hot sauce and butter until butter is melted. Brush or drizzle over chicken.
2. Grill chicken until it is cooked through. Slice thinly.
3. Top pizza crusts with mozzarella, blue cheese and diced peppers and broil on high for 4-5 minutes. 4. Remove from oven and top with cooked chicken and green onions.
5. Melt butter and combine with hot sauce and drizzle over pizza.

The flatbread is from my favorite brand, Flatout. It is their Artisan Thin Pizza Crust in rustic white. This was my first time trying this variety of Flatout wrap and we enjoyed them. They were a little thicker than other Flatout products and were perfect for this pizza. We love every product from this brand!
Though my daughter can tolerate some spice, I knew that having only the buffalo chicken variety of flatbread pizza may be a little too spicy for her so I made her a quick BBQ pizza with mozzarella cheese, roasted red peppers and ground beef. She loved this version and the buffalo version. My kid can eat!
