Yogurt Parfait Popsicles
These Yogurt Parfait Popsicles make the perfect summer breakfast! Filled with yogurt, fresh fruit and whole-grain granola, they are filling and delicious!
On a hot summer morning, the last thing that I want to do is turn on the stove to heat up the house. Oatmeal makes me too hot, waffles sometimes seem too filling, etc. I created these yogurt parfait popsicles because my daughter loves popsicles and these are actually healthy. They are for breakfast but can also be eaten for a snack or for dessert.
I used whole-milk yogurt (you can use any flavor that you like) for creaminess. If you use fat-free yogurt, it often is icy in popsicles instead of rich and creamy. I used a variety of fresh and frozen fruit that I had on hand. Feel free to use whatever fruit you have. Berries, kiwi, pineapple, banana, mango and more work well. For fun, I dipped the popsicles in some whole-grain granola once they were frozen to make it a more complete breakfast.
These are very easy to make. Just mix the ingredients together, fill in the popsicle molds, freeze and then dip in granola. A healthy breakfast that you can just pull out of the freezer and eat. Perfect for a hot summer day!

Yogurt Parfait Popsicles
Prep Time: 5 minutes
Servings: 4
Ingredients
- 6 ounce container whole-milk blueberry yogurt
- 6 ounce container whole-milk strawberry yogurt
- 1 scoop vanilla protein powder
- 1 cup chopped fruit (berries, kiwi, pineapple, mango, etc.)
- 2 tablespoons yogurt
- 1/4 cup granola
Instructions
1. Divide the protein powder in half and mix into each yogurt.
2. Spoon about a tablespoon of yogurt into each popsicle mold. Slide fruit slices down the sides of popsicle molds (so the fruit shows). Top with granola.

*Popsicles taste best when allowed to thaw for a few minutes.
