Blue Cheese Chopped Summer Salad
Blue Cheese Chopped Summer Salad is packed full of flavor and is the perfect salad for summer. Filled with crunchy red cabbage, creamy blue cheese and bacon, you won't be able to have just one bowl.
Yesterday after work, I went to pickup Adalyn from my mom's house since she watches her a few days a week for me. She told me that she wanted me to try a bite of this salad. I went into the kitchen to see the most ginormous bowl of pasta salad that I had ever seen!
I tried a bite and then went back for three more bowls. It was amazing. I love the crunch from the red cabbage. I love the tang from the homemade vinaigrette along with the creaminess of the blue cheese. All of the flavors blended together so, so well. I immediately asked my mom if I could have the recipe and to take some home to photograph. It is easily the best salad that I have had in a long time.
I will be making this salad all summer long to take to picnics, to our park, to a potluck, on road trips where we need a meal in the car, etc. It is fairly healthy with the vegetables. It is protein packed with the chicken, turkey bacon and blue cheese. Most of all, it is extremely tasty and addictive.

Blue Cheese Chopped Summer Salad

Cook Time: 15 minutes
Servings: 8
Ingredients
- 6 cups romaine lettuce, chopped
- 3 cups red cabbage, chopped
- 4 cups ditalini pasta, cooked
- 2 large tomatoes, diced
- 1 cup green onions, diced
- 2 cups chicken, grilled and shredded
- 1 cup turkey bacon, cooked and crumbled
- 3 ounces blue cheese crumbles
- 1/2 cup apple cider vinegar
- 1/3 cup olive oil
- 1/2 teaspoon black pepper
- 3 cloves fresh garlic
- 1/2 teapoon oregano
Instructions
1. In a large bowl, add all of the salad ingredients together and mix well.
2. Blend all ingredients for dressing in the blender or whisk in a bowl.
3. Pour dressing over salad and enjoy.
*This salad stores well in the fridge for at least 2-3 days.
