Avocado Grilled Corn Tomato Salad
Avocado Grilled Corn Tomato Salad makes the perfect flavorful appetizer or side dish for any party and is tangy with a homemade lime dressing!
Summer days and nights are packed full of events and I wouldn't have it any other way. When we are not traveling or at my parent's farm, we are most likely out doing something else. We are lucky to have two parks in our city- one with a splash pad and one with a pool. We love alternating between the two often.
Something new that we have gotten into lately is going to outdoor concerts. We have been to five so far that I can count. It has been fun to go just for something to do, even if the music is not always the best. Usually, we bring a meal or at least some hearty snacks. We usually make food ourselves (or my mom does) and have a nice picnic together.
My Texas Caviar is being requested for most BBQs and picnics this summer after I brought it everywhere this summer. This Avocado Grilled Corn Tomato Salad is similar to that dish but with the addition of avocado and grilled corn and without the black beans. Troy, Adalyn and I gobbled up 4 cups of this deliciousness in one evening at a picnic at our park.
You can eat it with chips, crackers or just with a fork. It is great both ways. It is flavorful, tangy and perfect for summer. When I make this during the months that fresh corn on the cob is not available, I use frozen corn which is good but not as delicious as grilled corn.
Avocado Grilled Corn Tomato Salad
Prep Time: 15 minutes
Servings: 6
Ingredients
- 1 large cob of corn
- 1/2 orange bell pepper, diced
- 1 green bell pepper, diced,
- 1 large tomatoes, diced
- 1 avocado, diced
- 1 green onion stalk, diced
- Juice from 1 lime
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
Instructions
1. Grill the corn for about 5 minutes on each side until it is cooked through and has charred grill marks.
2. Slice the corn off of the cob.
3. Combine all ingredients together and serve. This can be made a few hours ahead of time.
*To save time, the corn can be grilled ahead of time and stored in the fridge.

I love a good corn salad - to me, it always tastes like summer! These wines are so perfect for outdoor activities! I love beer when tailgating, but sometimes I like to mix things up so these would work great! #client
