Peanut butter and jelly is one of my favorite flavor combinations. I love peanut butter and jelly muffins, on toast, etc. Pretty much anything with peanut butter is my definition of the perfect meal/snack/dessert, etc.


Somehow, until now, I had never made overnight oats. I have read about them on blogs for years but never actually made my own until now. I have always been intrigued by the idea but never made them because I prefer my oats hot.

I have a hard time admitting this but I finally am getting sick of my beloved oatmeal for breakfast. After eating it everyday that I work for breakfast for years, I need a break. Oatmeal is so healthy and delicious though so I am not cutting out oats for breakfast completely but just switching up how I make them.

These peanut butter and jelly overnight oats are delicious, taste like a PB and J and are good for you. They have protein powder for a boost of protein and to help keep you full. The chia seeds are high in fiber, protein and omega-3 fatty acids. The strawberries are rich in vitamin C!

Peanut Butter and Jelly Overnight Oats

Prep Time: 5 minutes
Servings: 2

Ingredients 

    Peanut Butter Oats
    Strawberry Filling
    • 1/4 cup strawberries, diced (or frozen)
    Peanut butter to top

      Instructions

      1. Mix all ingredients together for peanut butter oats.
      2. Microwave strawberries for one minute and mash with a fork.
      3. In a small jar, layer strawberry filling and peanut butter oats.
      4. Let sit for at least 2 hours or overnight. Enjoy cold!

      For this recipe, I used Purely Inspired Organic Protein 100% plant-based nutritional shake which worked well in this recipe to give a boost of protein and nutrients. What I like is that this protein is not too sweet and it does not take over a recipe. The protein mix is dairy, gluten and soy free. Flavors include French vanilla and decadent chocolate.
