Blueberry Breakfast Cookies
These Blueberry Breakfast Cookies are packed with nutritious ingredients such as fresh blueberries, flax and muesli for a healthy and delicious breakfast!
When it comes to feeding my daughter breakfast, the number one thing that matters (to her) is that it is ready in 2 seconds. Adalyn wakes up starving and wants breakfast right away or else, she gets pretty cranky. We were making homemade chilaquiles the other day which took way too long for Adalyn's liking.

I created these blueberry breakfast cookies as a healthier cookie option that would be great for breakfast that is ready to go when Adalyn wakes up. If we still want to have something else for breakfast later, that is more than fine but this is great because they satisfy Adalyn's hunger while we get something else made.
I am very lucky that my toddler is not picky and will eat anything but even if you have picky kid, I think that your child will still enjoy these. If they do not like blueberries, swap for apples or dried cranberries or raisins.
I had a bag of muesli to use up and it was great in these cookies. I used whole wheat flour to add fiber. I used applesauce instead of butter. I added flax for omega-3 fatty acids. They were Adalyn approved!
Blueberry Breakfast Cookies
Prep Time: 5 minutes
Cook Time: 10-12 minutes

Ingredients
- 3/4 cup sifted whole wheat flour
- 1/2 teaspoon baking soda
- 2/3 cup applesauce
- 1/2 cup brown sugar
- 1/2 teaspoon vanilla
- 1 egg
- 1/2 teaspoon cinnamon
- 2 tablespoons ground flax
- 1 cup muesli
- 1/2 cup blueberries
Instructions
1. Preheat oven to 375 degrees.
2. Combine all ingredients in a large bowl and mix together well.
3. Spray baking sheet with nonstick spray and scoop cookie dough onto sheet.
4. Bake for 10-12 minutes.
