Kale Chicken Caesar Bites
Kale Chicken Caesar Bites are a simple appetizer that only require 4 ingredients! They are flavorful and easy to make!
When it comes to appetizers, I usually like to keep them quick and easy. I seem to entertain quite a bit in the summer and am always looking for quick and delicious recipes to make. Especially when my guests arrive, I do not like to be stuck in the kitchen. I want to be out socializing with them!
Some of my go-to appetizers to serve are homemade or store-bought hummus, Texas caviar, homemade salsa and chips or a veggie tray. When I want to spend a little more time and effort on an appetizer, I may make lighter buffalo chicken dip or Mediterranean layered dip (both recipes are on my blog!).

This past weekend, my mom requested an appetizer party for a meal up at their farm. My sister made a few appetizers, I made one and my mom made one. It was so fun. For dinner, we just had a couple of plates of appetizers! We had shrimp cocktail, loaded baked potato rounds, loaded veggie hummus, buffalo chicken dip and bruschetta. It was awesome!
For this appetizer, I combined the quick and easy appetizer idea with something that looked fancier than it is. These kale chicken Caesar bites look like I spent time in the kitchen but really, they are easy and quick. I grilled the chicken for that awesome grilled flavor. I used a light Caesar dressing to keep calories and fat in check. This appetizer is perfect for summer nights while hanging out outside.
Kale Chicken Caesar Bites
Prep Time: 5 minutes
Cook Time: 10 minutes
Servings: 4
Ingredients
- 8 ounces boneless, skinless chicken breast
- 1/2 teaspoon pepper, optional
- 1 cup kale, shredded
- 1/4 cup light Caesar dressing
- Crackers
Instructions
1. Sprinkle chicken with pepper. Grill until chicken is cooked through.
2. Cut chicken into slices.
3. Top each cracker with a piece of chicken, a couple pieces of shredded kale and a small amount of Caesar dressing.
