Kale Caesar Pasta Salad
This Kale Caesar Pasta Salad is so simple to make and is full of flavor and nutrients! Filled with whole-wheat noodles, kale, tomatoes, red onion and garbanzo beans.
Today is a very important day that calls for a celebration! It marks 9 years since I started dating my husband. 4/20 is a date that I will always remember and not for a reason that others talk about that date haha. Nine years is a long time and we are thrilled to be celebrating this great occasion together. We have a date scheduled tonight and I cannot wait!
Through our nine years together, we have gotten to have certain things that we love to do together. One of those things is to have a good meal together and another is to drink wine together. Why not combine those two things for the perfect day? I created this simple kale Caesar pasta salad for a summer BBQ side dish or main dish for a picnic. A lot of times, for a potluck, I do not know what to make and this is a great dish that is simple, tasty and a crowd pleaser.
It is simple like a traditional pasta salad but a little bit different. I love the kale in this pasta salad as it does not get soggy and tastes delicious! You can top this salad with grilled chicken or white beans for a more filling meal.
We took this meal to our local park and enjoyed a beautiful picnic together. Finally, things are starting to warm up and summer is coming! I have so many fun things planned for this summer and cannot wait to do them all!!
This fresh summer pasta salad is simple to make and tastes awesome! Kale is packed with nutrition along with tomatoes making it a healthy dish. I used whole-wheat pasta as always for fiber.
Kale Caesar Pasta Salad
Prep Time: 5 minutes
Cook Time: 15 minutes
Servings: 6
Ingredients
- 1 pound whole-wheat pasta
- 1 1/2 cups cherry tomatoes, halved
- 1 1/2 cups light Caesar dressing
- 1 bunch kale, chopped
- 1/2 red onion, finely chopped
- 1 can low-sodium garbanzo beans, drained and rinsed.
- 1/2 cup Parmesan cheese, grated
- 1 teaspoon black pepper
Instructions
1. Cook pasta according to directions, drain and put into a large bowl.
2. Mix together tomatoes, kale, onion, garbanzo beans, pasta and Caesar dressing. Top with Parmesan cheese and black pepper.
