Easy Pizza Soup
This easy pizza soup recipe combines all of your favorite pizza flavors in one bowl for a healthy and hearty meal!
I do not follow too many nutrition "rules". I am a dietitian that is all about moderation. I eat pizza, fries, burgers, doughnuts and more- all in moderation. There are a couple of food rules that I do try to stick with- making most of my grains whole-grain and eating fruits and vegetables at nearly every meal.
When I buy bread, pasta, crackers, rice, tortillas, flatbreads and more, I make sure that they are whole-grain. The exception is if I want a nice sourdough bread or something like that, I will have that as a treat. When I talk to my family, friends and co-workers about nutrition and they ask my advice, this is always one of the first things that I recommend.
I like giving this tip because it is such an easy change. I am not saying not to eat pasta. I am saying to chose the whole-grain version instead. That way, you can eat what you like and get a boost of fiber, vitamins and minerals at the same time.
I was inspired to create this easy pizza soup recipe from my co-worker Steve who is the chef at my work. We serve a homemade soup daily at my nursing home and he comes up with a different one everyday. A couple of months ago, he brought me a bowl of a pizza soup that was delicious. I was inspired to create my own using healthier ingredients.
This soup is packed full of vegetables and makes a nutritious meal. You can use your favorite pizza toppings in it. If you love olives, toss some of those on top. If you like mushrooms, cook some of those into the soup. When I create recipes, I am all about using whatever works for you, your preferences and your family.
For this soup, I used my favorite Flatout flatbread for the "crust" part of the pizza which goes on top of the soup. I love that that are 100% whole-grain so I can feel good about eating them. I love this brand because they taste great, are full of nutrients and they are made in Michigan.

Easy Pizza Soup
Prep Time: 10 minutes
Cook Time: 20-25 minutes
Ingredients
- 2 teaspoons olive oil
- 1 onion, diced
- 2 cups celery, diced
- 1 green pepper, diced
- 1 cup mushrooms, sliced
- 28 ounce can no-salt added diced tomatoes
- 1 small can no-salt tomato paste
- 32 ounce container low-sodium chicken broth
- 1 teaspoon Italian seasoning
- 2 teaspoons garlic powder
- 1 teaspoon oregano
- 2 Flatout flatbreads, diced
- 1 cup mozzarella cheese
- 1/2 cup turkey pepperoni, diced
Instructions
1. In a large pot, heat olive oil and add onion, celery, mushrooms and green pepper to pot and sauté for a few minutes.
2. Add diced tomatoes, tomato paste, chicken broth and spices and continue to cook until vegetables are mostly softened.
3. Scoop soup into bowls and top with cheese, flatbread and pepperoni.
