Roasted Chickpeas
These simple and easy Roasted Chickpeas make the perfect healthy and filling snack! They are protein-rich, fiber packed and irresistible!
The first time that I remember making roasted chickpeas was when Troy and I were first married and living in our mobile home in Fennville, MI. I saw the idea online somewhere and was intrigued. I love chickpeas and the idea of eating them as a snack. I love these simple Roasted Chickpeas as well as my Salt and Vinegar Roasted Chickpeas.
I made the roasted chickpeas for the first time that day and ate the whole pan! They were that good. I can't believe that I never shared my roasted chickpea recipe on the blog before because they are something that I make fairly often, are so easy and taste great.
Chickpeas are full of fiber, protein, manganese, folate and phosphorus. These are crunchy and taste like a salty snack but are much healthier. You can customize these to whatever flavor you like the best. You can make them sweet with cinnamon and sugar or spicy with cayenne and chili powder.
Roasted Chickpeas
Prep Time: 5 minutes
Cook Time: 30 minutes
Ingredients (Serves 6)
- 2 cans low-sodium garbanzo beans, drained and rinsed
- 2 tablespoons olive oil
- Sprinkle of garlic powder
- Sprinkle of onion powder
Instructions
1. Preheat oven to 425 degrees.
2. Dry chickpeas as much as possible with a paper towel.
3. Toss chickpeas with olive oil and spread on a baking sheet. Sprinkle with garlic and onion powder.
4. Bake in the oven for about 30 minutes, mixing halfway through. If chickpeas are not quite crunchy yet, bake for another 10 minutes or so.
Enjoy! Best if eaten the day they are made.

That's it! Easy and delicious. When I was photographing these, there was a tiny thief stealing half of my chickpeas. Apparently they are toddler approved as well!
