Slow Cooker Chicken Cacciatore
This hearty dish is packed full of delicious vegetables and lean protein. Set it and forget it and dinner will be ready when you're ready to eat!
One Saturday morning, I got the hankering for chicken cacciatore. I wanted to use my slow cooker as well so I decided to make it in there. As usual, I added more vegetables than usual and was thrilled how it came out. I was expecting it to be pretty good but when it turned out excellent, I knew that I had to photograph it and share with all of you!
What is great about this recipe is that you can set-it and forget-it! Just throw everything in your slow cooker, including the raw chicken, and let your dinner be made for you. Serve over your choice of pasta, potato or rice. We had ours with brown rice which was very good.
I love the way that my mom makes chicken cacciatore because it is full of my favorite thing: vegetables. This one is chocked full of tomatoes, onions, celery, bell peppers, carrots and fresh basil.
Boneless, skinless chicken is quite lean and the rest of the meal is vegetables so it is a very nutritious meal. I love the variety of colors in it as well. Eat the rainbow!
Slow Cooker Chicken Cacciatore
Ingredients:3 large boneless, skinless chicken breasts, cut into quarters
2 large carrots, chopped
1 green pepper, sliced
1 yellow pepper, sliced
1 onion, diced
3 stalks celery, diced
1 can no-salt added diced tomatoes
1 jar of pasta sauce of choice
1/4 cup diced fresh basil (or use 2 tablespoons dried)
1 tablespoon Italian blend spices
Directions: In a slow cooker, combine all ingredients and mix well. Cook on high for about 4-6 hours until chicken is thoroughly cooked and vegetables are mostly soft. Serve over brown rice, whole-grain pasta or potatoes.
This stores well all week! I made a bunch and we got to enjoy this for a few meals. My daughter loved it as well and I liked that the vegetables were soft enough for her to eat.
