Summer Fruit Baked Oatmeal

This summer fruit baked oatmeal is so easy to make and you can use any fruit that you have on hand-fresh or frozen! Prep the night before and eat the next day.

If I had to choose only a few foods to live on, I would go with fresh fruit, oatmeal and peanut butter. To me, there is nothing like summer fruit. It is so fresh and flavorful, there is nothing else like it. Breakfast happens to be my favorite meal of the day, as long as something sweet is involved. This meal is a breafast meal, involves fruit, oats and the peanut butter is optional- it was the perfect meal choice to me!

One Saturday morning, I decided to get creative in the kitchen and whipped up this baked oatmeal. I loved it and so did my husband and daughter. It is healthy, filling and very delicious. You can use whatever fruit you have on hand for it as most fruits should work well.

Ingredients:
3 cups old fashioned rolled oats
1 1/2 teaspoons baking powder
2 teaspoons cinnamon
1 1/3 cups milk, I used vanilla soy milk
1 scoop vanilla protein powder
2 eggs, beaten
1/4 cup syrup, I used light
~1 1/2 cups of chopped fruit for topping (strawberries, peaches, plums and blueberries work well.

Directions:
1. Preheat oven to 375 and spray a baking dish with nonstick spray.
2. In a bowl, combine all ingredients except for fruit and mix well.
3. Pour into a baking dish and cover with aluminum foil.
4. Bake in the oven for 15 minutes.
5. Remove from oven, take off aluminum foil and top with fruit.
6. Bake for another 10 minutes and serve.

Enjoy! This can be topped with syrup and/or peanut butter.

I will be making this recipe often. It is easy but looks beautiful. It was easy to cut into beautiful squares.

This baked oatmeal used the Purely Inspired vanilla protein powder for an extra boost of protein! It is a 100% plant based protein nutritional shake which worked well in this recipe to give a boost of protein and nutrients. It is dairy, gluten and soy free. One serving has 16 grams protein and 7 grams of fiber. It contains a concentrated greens blend with broccoli and spinach. It is a blend of proteins including pea protein, brown rice protein and alfalfa juice protein concentrate.
