Michigan Summer Grill Out

In the summer, we love to eat as much fresh produce as possible. In Michigan, around July is the time that a lot of produce starts being ready. The garden fresh tomatoes are turning red. The zucchini is basically coming out of your ears (there is so much!). I wanted to create a fun menu using products that grow well in Michigan for a delicious summer meal.
Everything is very fresh and tasted great. It is best to use fresh seasonal produce because it always tastes the best that way.
Michigan Kale Salad
Ingredients:
Chopped kale
Shredded carrots and red cabbage
Dried cranberries
Sunflower seeds
Sliced granny smith apple
Choice of dressing
Directions: Toss all ingredients together and enjoy!
Grilled Healthy Peach "Cobbler"
I chose to make peaches because in August, peaches are amazing in Michigan. These taste exactly like peach cobbler but are totally healthy.
Ingredients:
Peaches, halved
Cinnamon
Sprinkle of sugar
Directions: Sprinkle cinnamon and sugar on peaches and grill for a few minutes on each side.
I also made an orzo salad with feta, lemon, olive oil, garlic powder, kalamata olives, tomatoes, green pepper and summer squash. On the side were sliced pickled cucumbers with red wine vinegar and black pepper. Perfect!
Farm Fresh Veggie Hot Dog "Relish"
Ingredients:
1/2 cup finely diced zucchini
1/2 cup diced red pepper
1/2 cup diced onion
1 tablespoon olive oil
1/2 tsp dried basil
Directions: Combine all ingredients and mix well. Create an aluminum foil packet with the veggies and cook on each side for about 5-7 minutes or until vegetables are cooked.
The combination of franks and these toppings may not be Kosher.
Chopped zucchini, red pepper and onions for the hot dog toppings.
For our protein for this meal, we used Hebrew National All-Beef Franks. I love these hot dogs! They are super low in calories so you can eat one (or a couple) guilt-free. The veggie "relish" was delicious and healthy. A great way to use seasonal produce.
