Carrot Berry Banana Smoothie
This Carrot Berry Banana Smoothie is filling, takes 2 minutes to make and gives you a boost of protein, fiber and a serving of vegetables!
Today, the temperature was about 85 degrees, a beautiful summer day. Troy had just gotten back from a run and needed something to eat. I had been eating heavier over the weekend and wanted something healthy. Hence the carrot berry banana smoothie was born.
I had tried carrots in a smoothie once before but the carrot didn't get chopped up quite enough. This time, I was determined to be able to hide the carrot in the smoothie. In fact, Troy doesn't like raw carrots so I knew it you could taste it at all, he would taste it. Well, Troy ended up loving the smoothie and when I told him there was carrot in it, he said that he couldn't even tell. That's a win for sure!
The trick is to cut the carrot into little coins so it is easier for your blender to chop it up really finely. Also, I blended the carrot with the milk first so it was pureed before I added anything else. This smoothie is creamy, cold and refreshing.
Carrot Berry Banana Smoothie
Ingredients:
2 large carrots, chopped into small coins
1 cup soy milk (or milk of choice)
1 large very ripe banana
1/2 cup blueberries
1 scoop Purely Inspired vanilla protein
Handful of ice
Directions:
1. Blend together carrots and soy milk until very smooth.
2. Add the rest of the ingredients and blend until smooth.
Enjoy!
If you're scared of veggies in a smoothie, don't be! They are delicious. My favorites are kale, spinach and carrots.
My smoothie included Purely Inspired protein which I love! It is a 100% plant based protein nutritional shake which worked well in this recipe to give a boost of protein and nutrients. It is dairy, gluten and soy free. One serving has 16 grams protein and 7 grams of fiber. It contains a concentrated greens blend with broccoli and spinach.
