Chipotle Black Bean Burgers
My favorite product would have to be the Spicy Black Bean Veggie Burgers out of the products that I have tried. At the nursing home that I work at, we had a big event recently where we needed 80 packaged lunches for a party we were having. We made some chicken wraps for those who eat meat but also made a bunch of MorningStar Farms Spicy Black Bean Veggie Burger wraps.
These were so delicious! We have a corporate chef that works for my company and he had the great idea to use a sun-dried tomato wrap, spicy black bean burger, a homemade chipotle aoli sauce, tomato, cheese, lettuce and onion. These were amazing! Another time, he also made us some grilled black bean burgers with caramelized onions plus a bunch of other toppings.
I am totally hooked on these black bean burgers made by Chef Ed so for my MorningStar Farms recipe, I wanted to re-create his amazing black bean burgers for my recipe.
Chipotle Black Bean Burgers
Ingredients:
4 MorningStar Farms Spicy Black Bean Burgers
4 hamburger buns
1 thinly sliced red pepper
1/2 sliced onion
Fresh lettuce leaves
1 large tomato sliced
Fresh cilantro leaves
1 finely diced fresh jalapeno
For chipotle aoli:
1/4 cup low-fat mayo
1 tsp chipotle spice
1 tablespoon lime juice
1/2 tsp cumin
2 tablespoons chopped cilantro
Directions:
1. Cook black bean burgers according to instructions. I love them grilled and sauteed in a pan.
2. Meanwhile, combine all ingredients for chipotle aoli and mix well.
3. Assemble your burger on a bun with red peppers, onion, lettuce, tomato, cilantro and jalapeno.
4. Add a smear of chipotle aoli sauce.
Enjoy!
These turned out awesome and had so much flavor! I will be making them often. What I didn't know is that they have more than 30 different products which is awesome! Everything that I have tried is delicious and I would highly recommend MorningStar Farms products for quick vegetarian meals on the go.
Also, MorningStar Farms has a "Good Food for Good Times" tour going on where they are going to local festivals around the country serving healthy meal options. They will be in NY, NY 8/2, 9 and 16 and Detroit, MI August 29-September 1st at the Arts Beats and Eats Festival (which is a really great fest!).

I've been totally addicted to those black bean burgers lately! I've gone through an embarrassing number in the past couple of months. So good, though! And easy to make.
