Mediterranean Tzatziki Salad
I was recently sent some frozen and dry grains from VillageHarvest to try. I have reviewed these grains before and really like them. They come pre-cooked and frozen and also dry. I love the frozen ones especially because it is so easy to just microwave your grains for a few minutes and have healthy, whole-grains regular to go.
They have a variety of quinoa, wheatberries, brown rice,
wild rice, farro, jasmine rice and more. With the products that I was sent, I
decided to create a recipe using tzatziki sauce and farmer’s market fresh
vegetables.
The recipe turned out great and I have been enjoying this
throughout the week for my lunch at work.
Mediterranean Tzatziki Salad
Ingredients:
1 package frozen Village Harvest wheatberries
1 package frozen Village Harvest quinoa
1 cup tzatziki sauce (you can purchase this cucumber sauce
at most grocery stores in the refrigerated section)
1 cup halved cherry tomatoes
2 stalks diced green onion
1 small cucumber, finely diced
Directions:
- Empty packages of grains into a bowl and heat according to instructions.
- Add tzatziki sauce to grains and mix well.
- When ready to serve, top about a cup of grains with cherry tomatoes, green onion and diced cucumber.
Enjoy!
This recipe is very simple, is very fresh and tasty.
The addition of Village Harvest grains were very
tasty. I would definitely recommend purchasing these pre-cooked whole grains to
save time and to have healthy food ready to go in a pinch.
That looks absolutely delicious, not to mention a nice healthy alternative to some food people can (and have) been eating!
