Salad Nicoise and Heinz Vinegar
My mom has been making Salad Nicoise for years and it is easily one of my favorite recipes. I had a craving for this salad the other day and this is what I came up with. Typical salad nicoise contains tuna, salmon and eggs but this version does not. You could always add those ingredients on top if you wish. This salad nicoise is vegan, gluten-free and very healthy.

Serves: 1
Prep and cook time: 10 minutes
Ingredients:
Salad:
1 medium baked potato, diced
1 medium tomato, chopped (I used red and yellow tomato)
3 low-sodium olives, chopped
1/2 cup raw green beans, chopped
1/2 cup red romaine lettuce, torn into bite sized pieces
1 green onion, diced
Dressing:
1 tablespoon Heinz Filtered Apple Cider Vinegar
1/4 tsp garlic powder
1/2 tsp Dijon mustard
1/4 tsp black pepper
Directions:
1. Whisk together all ingredients for dressing.
2. Mix together all ingredients for salad.
3. Top salad with dressing and serve.
This simple summertime salad was delicious! Using fresh ingredients really added flavor to the recipe. For protein, add beans, chicken, tuna, salmon or hard boiled eggs.
