Yogurt Macaroni and Cheese with Ham
I used the Essential Eating sprouted 100% whole grain elbow pasta. To start this recipe, I cooked up the pasta. What I noticed about this is that it is much darker in color than other whole grain pastas which I did not mind. Also, the noodles are bigger than other elbow noodles. Since this flour is sprouted, it is thought to digest easier than other whole grains. One serving of this pasta has 57 grams of whole grains which is 100% of the Recommended Daily Allowance. One serving of this pasta contain 170 calories, 7 grams of fiver and 9 grams of protein which is amazing for pasta!! I love the extra boost of fiber and protein.
Yogurt Macaroni and Cheese with Ham
Ingredients:
1 16 ounce box of whole grain elbow pasta (I used Essential Eating sprouted elbow noodles)
2 1/2 cups plain yogurt (I used goat milk yogurt but any would work)
1 tablespoon butter
1 tablespoon whole wheat flour
1/2 teaspoon black pepper
1 1/4 cup shredded sharp cheddar cheese
3/4 cup shredded Parmesan cheese
1 1/2 cups diced ham
Directions:
1. Cook pasta according to directions leaving it slightly undercooked.
2. Drain pasta and set aside.
3. Meanwhile, in a saucepan, met 1 tablespoon of butter and add flour and pepper. Stir.
4. Add yogurt and cook until sauce boils.
5. Add cheese and stir until melted.
6. Stir in the ham and macaroni noodles and transfer to a baking dish.
Serve immediately!
This pasta turned out really well! It was whiter than other macaroni and cheese because of all of the yogurt. I loved the tang that the yogurt gave the recipe. I served this to my husband and parents and we all enjoyed it. The pasta noodles were tasty and this was definitely a meal that I went back for seconds. I would use these Essential Eating noodles again in the future. They also held up well for leftovers.
