Vegetarian Lent Fridays
As a Catholic, I do not eat meat on Fridays during Lent. I wanted to give all of you Catholics out there some great meat free options that are also healthy and simple. Enjoy!
Here are some of my favorites:
Healthified Tuna Salad
Hummus and pita chips with cheese and a big salad
Shrimp and Couscous Stir Fry
Grilled Portobello Burgers and Strawberry Balsamic Salad
Pumpkin Soup
Vegetable Lasagna
Spicy Healthy Alfredo
Skinny Mexican Layer Dip
