It Takes Two Shrimp Scampi
Two nights ago, Troy and I got home from grocery shopping and were not sure what to make. We had some shrimp defrosted and decided on that. I call it "It Takes Two" because we made it together : ) Troy made the sauce while I sauteed.
Easy Shrimp Scampi
1 lb of shrimp with the tails pulled off
Garlic powder
1 large zucchini
2 tablespoons butter
1 lemon, juiced
A dash of chili powder
Black pepper
Onion powder
1. Saute up some chopped up zucchini in a little oil with some garlic powder.
2. Add the shrimp and saute 5 minutes more.
3. Turn off the stove and add a mixture of the lime, butter, chili powder, black pepper, and more garlic powder.
Enjoy!
Also, on the side we enjoyed homegrown tomatoes sliced up with red wine vinegar and chili lime salt.
On the George Foreman, I made one grilled cheese sandwich with Gouda cheese for the both of us to share.
It was a tasty and satisfying dinner.
